Yields 10 people

To make the Clementine Cordial (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Premix (yields 850ml, serving 10)

400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, to finish

Instructions

To prepare the Syrup: Put the listed items in a pot, bring to a light boil, agitating to dissolve. Next, turn off the heat allowing it to cool down entirely. Decant into a clean bottle, seal and store in the fridge, it can be stored for up to a month.

Preparing the Premix: Mix all the spirits and syrup into one big jug, allow it to infuse for 60 minutes, then pass it through preferably using a fine cloth, so it's completely strained.

To serve: Measure 85ml from the premix into your cocktail shaker filled with ice, gently stirring gently for one minute to cool it down. Pour into a frosted cocktail glass or a similar vessel, decorate with some cranberries adding the final touch with a quick spritz of mandarin oil above the glass.
